Since its early days Cantemus has tackled music from a wide range of styles and periods, concentrating mainly on music for unaccompanied choir. It sometimes performs with the Cantemus Orchestra, including in well received performances of Haydn's 'Nelson mass', Arvo Pärt's 'Te Deum', Duruflé's 'Requiem', and Finzi's 'Intimations of immortality' in the the Canterbury Festival in recent years. Cantemus also performs outside Kent, most recently on a weekend tour to Reims in France (see gallery).

Other significant performances include: Barber's 'Reincarnations' and 'Agnus Dei'; Britten's 'Hymn to St. Cecilia', 'Rejoice in the lamb', and 'Ceremony of Carols'; Byrd's 'Masses for four and five voices'; Copland's 'In the beginning'; most of Finzi's choral music; Martin's 'Mass for double choir'; Palestrina's 'Missa aeterna munera'; Ravel's 'Trois chansons'; Taverner's 'Western wind mass'; Victoria's 'Tenebrae responsories'; Monteverdi madrigals; and motets by Palestrina and Poulenc.
